Herb Fennel Common or Green - Perennial

There really is nothing quite like the flavour of your own home grown herbs added to your cooking or salads.

Fennel Green boasts bright green feathery foliage on erect stems with an aniseed flavour. Use the leaves with fish or pork, or to flavour soups, sauces or salads. Fennel produces bright yellow flowers which make it suitable for the back of flower beds as it grows to a height of about 150cm. It also encourages bees and pollinators into your garden.

When to Sow Fennel Seeds

In the spring

Where to Sow

In spring, when the soil is warm, in shallow drills. Cover lightly with fine soil or compost and water well. Thin seedlings and transplant to growing site when large enough to handle. Prefers good, well-drained garden soil and full sun.

Harvest

Leaves before flowering for drying, otherwise any time. Harvest seeds when ripe.

Uses

To preserve, freeze leaves or infuse in oil or vinegar.  Dry the seed.

Handy Tip

Grind 4 tbsp of fennel seeds with 2 handfuls of thyme leaves, two bay leaves and 2 gloves of garlic, add some ground black pepper and pinch of salt to make a delicious rub for any red meat.
